Grappa

Vinsanto

The Vinsanto del Chianti Classico DOC FL Fuoriserie was born in 2006 20 km Northeast of Siena, in the southern part of the Chianti, towards Gaiole.
The production methods are rigorously artisanal and mostly by hand.
To protect their living and working environment, the owners do not use chemicals that are harmful to the soil. Plants are cultivated in a way that respects their natural balance, using interventions that improve aeration, exposure to sunlight and controlling humidity, in a way that increases the plants’ defences against attack from disease or pests.

The Malvasia a and Trebbiano grapes used for this Vinsanto are carefully selected by hand
at the end of September 2006 and are then hung in well-ventilated rooms for drying.
After a few months of maturing, the result is a must that is rich in extracted sugar, which is then
sealed in traditional Tuscan Caratelli barrel for 12 years. Only after this long wait, the Vinsanto is ready for the delicate bottling operation.
The careful selection of the best grapes, the excellent craftsmanship, the long stay of the wine in traditional Tuscan Caratelli ensure that a unique concentrate of density, color, aroma and flavor is obtained, a true “Fuoriserie” nectar.

Vermouth

This red Vermouth is the result of the union of fine Tuscan wines, precious spices and aromatic herbs. Unlike standard Vermouths, in which the remaining grapes from other processes are used, for this flavored wine, the most typical grapes of the territory of origin are manually selected: 80% Vernaccia di San Gimignano DOCG and 20% Chianti Classico DOCG.
A unique choice that reveals itself in the unmistakable taste of a true “Fuoriserie”.

The vinous notes are linked to various hintsthat recall balsamic elements, raisins, candied citrus fruits, dried figs, cloves, rhubarb, cinchona, rosemary, lavender and Mediterranean scrub.
The taste is per sistent, thanks to the numerous flavors obtained by the long infusion of spices and herbs in the base wine, in proportions and times that we cannot reveal.

Renazzo

The Vernaccia di San Gimignano DOCG presents itself in a light straw-colour with greenly reflexes.
The aroma is fine, fruity and very harmonious with evident apricot and apple notes, enhanced by floral references.
In the mouth it is fresh, dry, rightly acidulous and medium-bodied.
The characteristic slightly bitter aftertaste highlights its typical features.

RENAZZO

Uncle Ferruccio’s birthplace is in Renazzo, where the first mechanical creations came to life, in a small mechanical workshop he himself created inside the rural house.
This Vernaccia di San Gimignano DOC with a simple and genuine character is inspired by that pure place full of history from which it all began.

Penzale

Name: Romagna DOC Sangiovese Superiore
Origin: Emilia Romagna, Italy
Grapes: 100% Sangiovese

The color is intense ruby, typical of Sangiovese grapes. The nose is intense and elegant with fruity aromas of cherry and currant, and floral aromas of lilac and violets. In the mouth it shows full body with structural components in perfect balance. Very fresh and persistent, it also recalls the notes of ripe red fruit in the mouth.
This wine is very suitable with first courses with meat sauce and grilled meat, but also Katsudon and Gyudon.

PENZALE

This pure Sangiovese is characterized by its full-bodied and enveloping taste, perfectly balanced and typical of its area of origin: Romagna. A wine that reminds Fabio of the joyful moments of his youth, lived in the Penzale district of Cento, where he was born and raised and to which he wanted to dedicate this wine.
