Born in 1983 in the city of Amagasaki in the Hyogo prefecture, Yamada inherited a strong sense of spirituality from his paternal side and a refined sensitivity for cuisine from his maternal side. Raised in an environment that valued discipline, sacrifice, and quality, he developed from an early age a deep passion for artisanal work and Japanese culture.
After high school, he embarked on an unconventional path: instead of pursuing university studies, he chose to become a traditional gardener in Kyoto. There, he learned attention to detail, respect for nature, and the art of patience, working in some of Japan’s most famous gardens, such as Kinkaku-ji (the Golden Pavilion) and Ginkaku-ji (the Silver Pavilion). This period not only shaped him physically but, more importantly, taught him the value of dedication and precision.
His life took a turning point with marriage and his entry into the company of his father-in-law, Tadashi Kimura, an entrepreneur in the food sector. When Yamada took over Sangenan, the family pastry shop, the company was struggling. Thanks to his vision, he transformed a brand that primarily produced for the OEM market into a benchmark for high-quality castella, bringing his sweets to Japan’s most prestigious fairs and winning Michelin-starred restaurants.
